Who Is This Course For?
This course is designed for coffee lovers and home baristas who already understand basic espresso preparation and want to develop greater control over extraction and flavor.
It is ideal for participants who want to learn how to calibrate different coffees, understand extraction problems, make informed recipe adjustments, and achieve more consistent results from their espresso machine.
Coffee Calibration
Learn how different coffees require different approaches to espresso preparation.
Participants will work with different coffee origins, processing methods, and roast styles to understand how the characteristics of the coffee influence grinder settings and espresso recipes.
Grind, Dose, Yield & Extraction Time
Develop a practical understanding of the four key variables used when dialing in espresso:
Grind Size – Learn how finer and coarser adjustments influence flow and extraction.
Dose – Understand how the amount of ground coffee affects your recipe.
Yield – Learn to control the amount of espresso produced in the cup.
Extraction Time – Understand how time interacts with grind, dose, and yield to influence flavor.
Understanding Brew Ratio
Learn how the relationship between the dry coffee dose and espresso yield affects strength, body, sweetness, acidity, and overall balance.
Participants will practice adjusting brew ratios rather than relying on a single fixed espresso recipe for every coffee.
Understanding Espresso Extraction
Learn to identify common extraction problems and understand their effect on flavor and consistency.
Training covers:
Under-Extraction – Recognizing sharp, weak, or insufficiently developed espresso.
Over-Extraction – Understanding excessive bitterness, dryness, and loss of balance.
Channeling – Identifying uneven water flow through the coffee puck and learning how preparation technique can reduce it.
Sensory Evaluation & Recipe Correction
Taste becomes an important calibration tool at Level 2.
Participants will learn to evaluate key characteristics including:
Acidity • Sweetness • Bitterness • Body • Balance • Finish
Through guided sensory tasting, participants will identify what is happening in the cup and decide which brewing variable should be adjusted to improve the next extraction.
The goal is to move from simply following a recipe to understanding how to read the taste of an espresso and make informed corrections.
Advanced Milk Texturing
Build on basic steaming skills by learning how to create fine, silky microfoam suitable for different café-style milk beverages.
Training focuses on controlling aeration, milk texture, temperature, and consistency to achieve a more refined result.
Workflow & Consistency
Learn how professional habits can improve home espresso preparation.
Participants will develop a more structured workflow covering puck preparation, extraction, milk steaming, recipe adjustments, and repeatability.
You will also learn how to record espresso recipes and calibration changes, making it easier to reproduce successful results with different coffees.
Course Outcome
By the end of Level 2, participants should be able to taste an espresso, identify common extraction problems, adjust the recipe, and work toward cleaner, sweeter, and more consistent results.
The course develops the connection between taste and technical adjustment, helping participants move from basic home espresso preparation toward a more informed and controlled barista workflow.
